Strawberry Fields Salad

We’re excited to share a vibrant and satisfying dish brought to us by Cindy: the Strawberry Fields Salad. This delightful recipe is a celebration of summer's bounty, featuring juicy strawberries, crisp mixed greens, and tender pieces of leftover grilled or rotisserie chicken. Tossed together with crunchy nuts, crumbly feta cheese, salty bacon, and a tangy balsamic vinaigrette dressing, each bite is a harmony of sweet, savory, and tangy flavors. But here's the beauty of this salad: it's completely customizable! Feel free to add your favorite ingredients like avocado, cucumber, or even grilled veggies to make it your own.

Strawberry Fields Salad

Ingredients

2 c. cooked chicken breast

4 slices bacon

5 oz spring greens or butter lettuce

1 ½ c. strawberries

½ small red onion

½ c. feta (crumbled) or mozzarella cheese

½ c. pecans

Balsamic Vinaigrette Dressing

Instructions

Place all the salad ingredients in a large bowl, reserving a few bacon crumbles and feta/mozzarella cheese for garnish. Add the desired amount of dressing and toss to coat. Add nut/cheese crumbles on top. Chill for up to an hour or serve immediately and enjoy.
