Mini Tacos

Our family LOVES these mini tacos. Mini tacos are bite-sized versions of traditional tacos. They consist of small tortillas filled with various ingredients. When I make these yummy tacos for dinner I make loads of extras so we can fill all the hungry tummies. Last time I made these my family went crazy with excitement. We hope your family enjoys them too.

Mini Tacos

Ingredients

6 c. shredded chicken

24 street taco corn tortillas

4 c. shredded cheddar cheese

olive oil as needed

1 container sour cream

1 jar salsa

1 container Guacamole

1 bunch cilantro

Instructions

Sprinkle with taco seasoning on uncooked chicken and cook in your slow cooker on high for 4 to 6 hours. Once done shred with two forks

preheat the oven to 425 degrees

place parchment paper on cookie sheet

brush olive oil on one side of the corn taco shells place down on the parchment paper.

place shredded chicken in the middle of the shell with some cheese.

bake for 12 minutes

Fold tacos (careful they are HOT). Top with your favorite toppings and EAT!!
