Burrito Bowl

We had so much fun eating this meal. Our kids loved putting the things they liked most on their burrito bowl. I wish you all could have sat around our table that night as we ate this meal. It was full of happy kids, lots fo talking and laughter. Crazy how much power a good meal has on the atmosphere of a home.

Burrito Bowl

Ingredients

1 lb Chicken Tenderloins

1 jar salsa

1 can, 15.5 oz, black beans

3 c. frozen corn

6 c. rice

1 c. grape tomatoes

2 small avocados

1 head romaine lettuce

3 limes

1 bunch cilantro

ranch dressing to taste

1 bag tortilla chips

½ tsp ground cumin

½ tsp chili powder

½ tsp smoked paprika

Instructions

Put your chicken (frozen), salsa, cumin, chili powder, paprika in a crockpot for 4 hours on high. Once cooked, shred chicken.

Warm black beans, corn, diced tomatoes, diced avocado, chopped lettuce, quartered limes, and cilantro in separate bowls.

You can add your burrito making ingredients to a dish like shown in the picture or you can keep ingredients in separate bowls. We kind of do both with our family.  Make up your burritos and enjoy!
